Mint Ice Cream with Chocolate Chips – Homemade

Mint Ice Cream with Chocolate Chips:

Mint ice cream is a classic and deliciously tasty ice cream.

I just love ice cream and there are so many different flavours and types.

This particular mint ice cream is made with no eggs so it is an easy ice cream to make. And you don’t need an ice cream maker for this mint ice cream recipe.

It is great to be sharing this wonderful ice cream recipe with you.

The mint ice cream is gorgeous with the chocolate chips in it and of course I have added a little twist by adding some mint chocolate to it. MMmmm I am getting hungry writing about this mint ice cream. I hope you love it too.

Ingredients

  • 60 mint chocolate bar
  • 100 – 200g chocolate chips
  • 2 tsp peppermint
  • 1 tsp green food colouring
  • 500ml cream
  • 1 tin of condensed milk
  • ½ tsp vanilla extract

Mint Ice Cream with Chocolate Chips – Method & Instructions

Pour the cream into a large mixing bowl and whisk until it is firm.

Empty the tin of condensed milk to the cream and mix well.

Add the vanilla extract, peppermint and the food colouring to your mixture.

Stir it thoroughly to mix the green food colouring well. If you don’t it just means you may get white bits of ice cream but that is ok as it tastes the same.

The chocolate chips now need to be added and mix them into the mixture.

Crumble the mint chocolate bar by squashing it between your fingers or you can grate the chocolate if you prefer.

By adding the mint chocolate bar to your ice cream it just gives it an even more wonderful flavour and texture.

Put the mixture into a couple of containers.

Cover the ice mint ice cream with a bit cling film. Push the cling film to touch the ice cream to prevent freezer burn and to stop it sticking to the lid while it is freezing. Once the ice cream has frozen you can then discard the cling film.

Your delicious mint ice cream can now go in the freezer. It needs to be left for at least six hours. At least once, maybe twice it is a good idea to take it out and the freezer and mix with a fork within that six hour freezing time. But if you forget and don’t mix it in that time, it will still be fine.

Whenever you want to eat your homemade ice cream just take out the freezer and serve.
