Chicken Curry Noodles Recipe:

Chicken Curry Noodles are a wonderful combination.

With this recipe you can simply adapt by either omitting the chicken or the vegetables or both.

The creamy curry sauce is extremely flavoursome and the noodles just soak up the flavour.

Hopefully you will love these chicken curry noodles as much as I did.

This chicken curry noodles recipe doesn’t take long to cook and it is easy to make for one person as it is to make for a pile of people.

Ingredients

  • 100g carrot (1 medium carrot)
  • 70g cabbage
  • 1 medium onion
  • 2 chicken breast
  • 90 – 100g noodles
  • 3 spring onion
  • 2 tbsp curry paste
  • 1 can of coconut milk
  • 1/4 – 1/2 tsp Curry powder
  • 2 tbsp tomato puree
  • 1/2 tsp Paprika
  • 1/2 tsp Cumin
  • 1 tbsp Coriander
  • 1/4 tsp Cayenne pepper
  • 1/4 – 1/2 tsp Chilli flakes
  • 1/4 tsp Ginger
  • 1/2 tsp Turmeric
  • Oinch of Salt
  • Olive oil for frying

Chicken Curry Noodles – Method & Instructions

Preparation for Chicken Curry Noodles

Peel and chop carrot into large thin pieces.

Dice up the cabbage.

Cut the onion into half moons.

With the spring onion it is nice if you cut on the bias which means cutting diagonal.

Your chicken needs to be cut up into small strips or cubes.

Cooking your Chicken Curry Noodles

Place olive oil in a wok or deep frying pan.

Into the olive oil add the curry paste.

Give the curry paste a stir with a wooden spoon.

Add the onions into the wok and mix well into the curry paste.

Season with salt.

Put in the toamto puree, mix and then let cook for 2 – 3 minutes.

Now the chicken needs to be added.

It easier to mix it all together with 2 wooden spoons, ensuring the chicken gets covered well into the mixture.

Add your carrots.

It’s quite dry at this stage so now you need to add the coconut milk and mix well and you will see the colour change and it looks and smells wonderful.

The cabbage now needs to be added if you are putting that in.

Add turmeric, cumin, paprika, cayenne pepper, ginger, chilli flakes, curry powder and corriander and mix well.

Cook on a medium heat for about 15 minutes.

After 10 minutes of cooking put on a pot of boiling water and cook the egg noodles to manufacturers instructions, usually they need about 4 minutes.

Add the spring onions to the curry at the last minute.

When noodles are ready, drain and rinse with hot water.

Add the noodles into your chicken curry and mix well.

Serve with tongs into a wide bowl or plate and enjoy your chicken curry noodles.

Pizza Recipe – With a Naan Bread Base

Pizza Recipe:

Pizza is a lovely dinner that everyone loves. A pizza is so versatile. There are so many different toppings and you don’t have to stick with the traditional pizza base.

I decided it would be nice to show you a pizza with a Naan Base and also a Pizza with a Wrap as your Base.

This quick and simple pizza takes just 5 minutes to prepare and 10 minutes to cook.

The beauty of this pizza recipe is the children can make their own.

And the pizza would be fine to eat hot or cold.

This simple pizza is great for a snack, lunch or a dinner.

I also have a delicious recipe for a pizza using Filo Pastry.

Ingredients

  • Naan Bread or Wrap
  • Red Pesto
  • Cheese of your choice
  • Onion
  • Chicken Breast
  • Olive Oil
  • Paprika
  • Jamaican Jerk Seasoning

Pizza – Method & Instructions

Pre-heat the oven to Gas 6/200°C/400°F

Pour about a tbsp of cooking oil over your chicken breast. Spread cooking oil around the chicken breast with your fingers, making sure to cover both sides.

Sprinkle some paprika over the chicken and using your fingers, rub the paprika into the chicken breast on both sides. The olive oil helps spread the spices and seasoning.

Now sprinkle some Jamaican Jerk on both sides of your chicken breast and again spread it around with your fingers.

Fry your chicken breast in a wok or frying pan. Turning it every 3 – 4 minutes to ensure a nice even cooking.

Once it is fully cooked, you will see the sides of the chicken is white and not pink anymore. You can double check that the chicken is cooked by cutting into the thickest bit of chicken and making sure it is not pink in colour.

Cut your chicken breast into small pieces.

With your onion, it is best to cut it into thin half moons, but of course you can dice the onion if you prefer.

Now for the TOPPING of your Pizza

Liberally spread some red pesto over the Pitta Bread or Naan Bread, which ever you decide to use.

Scatter some onions over the red pesto.

Place your chicken pieces on top of the onions.

Then cover with cheddar cheese or whatever cheese you like.

Put the pizza in the oven for 10 minutes.

Enjoy this simple and deliciously tasty pizza with naan or pitta bread.

If you want to try using a wrap as your pizza base, then repeat the above process but using a wrap instead of the Naan Bread.

When you take it out the oven, you can eat as it is or fold the wrap over.

Either way, it tastes really good.

Chicken Stew Recipe:

Chicken stew is a nice tasty meal that warms us up on those cold days.

A chicken stew is full of flavour and goodness. It is a meal that will make us feel good.

The beauty of a chicken stew is that it is great for a big family. Everyone can just help themselves from the pot.

Chicken Stew is perfect if you are having guests for dinner as you can have it all ready before your guests arrive and then you are not disappearing into the kitchen for ages, leaving your guests unattended.

Also with this chicken stew it is perfect for one or two people living in the house, as you can freeze this chicken stew into portion and just take it out as and when you need it and simply heat the chicken stew up on the day you want to have more. This way you can still eat healthy when living alone.

For those of us that have busy lives but want to eat healthy and not rely on a take-away and readymade meals, this chicken stew is the perfect type of meal as it easy to make a big pot full (one lot of cooking) and freeze it into portions for future use. A few days dinner is made in one go, saving you time.

Ingredients

  • 1 small chicken
  • 3 litres of water
  • ½ (300g) sweet potato
  • 3 medium (450g) potato
  • 1 large onion
  • 85g (handful) green beans
  • 2 (250g) carrot
  • ¼ (300g) swede
  • chicken gravy granules
  • 1 leek
  • salt & pepper
  • 1 tsp mixed herbs

Chicken Stew – Method & Instructions

In a large pot something like a 4 ½ litre pot, put 2 ½ – 3 litres of water.

Into the pot of water, place your chicken upside down and put on a lid. You may wish to adjust the lid slightly to let a little bit of steam out.

Turn the heat to high and bring the water to the boil, then turn down the heat and simmer for 1 ½ hours.

While the chicken is cooking, it is a good idea to prepare your vegetables at this stage.

Firstly roughly dice up your onion.

Secondly chop your carrots into either large diced pieces or half moon circles or full circles. Whatever you decide it is best that they are chunky. You don’t want your vegetables too small. I personally leave the skins on but if you don’t like to of course it is fine to peel the skin of your carrots.

Peel the skin of your swede, this can be done with a peeler or you can use your sharp knife. Making sure to cut down and away from you and not up towards you. And dice the swede into large chunks.

With the sweet potato you need to peel and dice into large chunks too.

Cut both ends of the green beans and then cut the beans in 3 so they are about an inch in length.

The potatoes can be peeled or you can leave the skin on. You need to dice the potatoes into chunks of about 1 – 2 inches. Place the potatoes into a bowl of cold water, making sure the water completely covers the potatoes. This prevents the potatoes from turning black.

Next you need to chop off the end of the leek and slice into circles of about ½ an inch thick.

The Chicken Stew Smells AMAZING!!!!

Once the chicken is cooked, remove it from the pot by getting a couple of large serving ladles or spoons (holey ones are best) and tilt the chicken slightly and let the juices drain from the chicken for a couple of minutes. Then place the chicken on a large dish or plate the right way up.

You need to sieve the chicken juice from the pot into a bowl, allowing the sieve to filter any unwanted little bits. After you have emptied the juice from the pot, wash the large pot out. And then pour the chicken juice from the bowl, back into your large pot.

Now it is time to pull the chicken meat off and place the chicken pieces into the chicken juice.

Place all the prepared vegetables into the pot of lovely chicken juice.

Season the chicken stew with salt & pepper and mixed herbs. Put the lid back on.

Have the heat on high now and bring to the boil.

Once boiled, turn the heat down and simmer for 20 – 25 minutes until all the vegetables are cooked.

Take out about 2 cups of juice and add some chicken gravy granules a little at a time and stir with a fork or a tablespoon. Once it is nice and thick then add it back into your stew. The gravy will thin out again when mixed with the rest of the stew juice.

The Chicken Stew Looks Amazing Too!!!!!!!!!

Give the chicken stew a good stir. If you find the chicken stew too thick then just add a little water to it.

By putting the chicken in at the same time as adding the vegetables it makes the chicken go all stringy and is beautifully distributed in the stew. However, if you like chunky bits of chicken then add your chicken into the chicken stew at the end after you have added your chicken gravy.

Now it is time to serve into a bowl and enjoy.

How to Make a Cheese Burger:

A Homemade Cheese Burger  is something you need to know if you like burgers. A homemade burger is the best.

Cheese burger is a delicious meal. This cheese burger recipe is so easy to make and extremely tasty.

I show you two different ways on how to make a tasty homemade burger.

One method is using egg and bread crumbs and the other method you don’t need an egg or breadcrumbs.

These two methods give a slightly different flavour to each burger.

There are two different ways that I  show you on how to make a double decker cheese burger and I show you how to make a burger in a bap accompanied by bacon and fried egg.

Burgers or a cheese burger at a BBQ is a must. Homemade coleslaw goes really nice with a juicy homemade cheese burger.

Ingredients for Option 1

  • 20g onion – for beef pate
  • 1/2 onion – for frying and putting in your bap
  • 500g beef mince (130 – 150g per burger)
  • ½ tsp cayenne pepper
  • 1tsp turmeric
  • 15g cheddar cheese per burger for the centre
  • Lettuce or rocket or spinach
  • tomatoes
  • cucumber
  • 1 tbsp mayonnaise
  • 1 tsp BBQ sauce

Double Decker Cheese Burger – Method & Instructions for Option 1

Dice up some onion.

Place onion and mince into a bowl.

Season with salt & pepper.

Add turmeric and cayenne pepper.

Mix it all together with your hands.

Weigh out 130g of the mince for each burger (maybe up to 150g if you want a really big one).

Squash it together and make a ball shape.

Flatten with your hand especially in the middle section.

Place 15g square of cheddar cheese in the centre of the beef pate.

Gather the beef pate around the cheese, and then flatten again so it is about ½inch to 1inch thick.

Cook in a frying pan on a low to medium heat on one side or cook on a BBQ.

Cut onion rings and cook along with the burger.

Flip over the burger to cook other side and place a cheese slice on the top of that cooked side so it melts as the second side is cooking.

In the meantime mix mayonnaise and BBQ sauce in a dish ready to put on your burger bun.

Slice up cucumber and tomatoes ready to put in your burger bun.

Once the burger is cooked put on a plate.

Brown the inside of the burger bun in the frying pan.

Build your burger bun – put mayonnaise and BBQ sauce mix on the bottom bap, then green salad e.g rocket or lettuce or spinach leaf, then cucumber, then tomato, then  burger and then the onion then top of burger bun if you want a single. But if you want a monster of a cheese burger repeat the building process on top of a middle burger bap.

Serve with homemade coleslaw if you want.

Ingredients for Option 2

  • 500g mince
  • 50g breadcrumbs
  • 2 tbsp tomato puree
  • 20g dices onions
  • Salt & pepper
  • 1 tsp Turmeric
  • ½ tsp Cayenne pepper
  • Handful chopped fresh parsley or 2 tsp dried parsley
  • 1 egg yolk
  • 1 egg
  • 2 bacon rashers
  • burger bun

Beef Burger with Bacon and Egg – Method & Instructions for Option 2

Separate egg yolk and discard egg white.

Put mince, breadcrumbs, tomato puree, onions, parsley, cayenne pepper, turmeric, salt & pepper, and egg yolk in a bowl.

Mix all together with hands.

Take out 130 – 150g of mixture and form it into a ball shape then place on worktop and flatten into a burger shape – ½ – 1 inch thick.

Cook in a frying pan on a low to medium heat on one side or on a BBQ.

Cut onion rings and cook along with the burger.

Flip over the burger to cook other side and place a cheese slice on the top of that cooked side so it melts as the second side is cooking.

Fry egg and bacon.

Build burger bun – buttered bap bottom first, then burger with cheese slice, then the fried onions, then fried bacon, then the fried egg, then tomato (fried or cold) and then finished burger bap top.

Serve with chips if you want.

Chicken Neapolitan Recipe:

Chicken Neapolitan is a wonderful chicken dinner.

My particular recipe for chicken Neapolitan comprises of large pieces of succulent chicken breasts infused with a really tasty tomato sauce and spaghetti pasta mixed in with the chicken and sauce.

This beautiful recipe for chicken Neapolitan is extremely easy to make once you know how.

It involves simple ingredients that would be in our store cupboards.

And making this chicken Neapolitan takes no time at all. A wonderful easy dinner to make, so go on try it.

Ingredients

  • 1 onion
  • 4 garlic cloves
  • 4 fresh medium sized tomatoes
  • 2 chicken breasts
  • Olive oil for frying the chicken
  • 40g butter
  • 1 can of chopped tinned tomatoes
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp turmeric
  • ½ tsp cumin
  • ½ tsp ginger
  • 1 tsp parsley
  • 1 tsp oregano
  • 3 tsp basil
  • 1 tbsp brown sugar
  • 200g spaghetti
  • parmesan cheese

Chicken Neapolitan – Method & Instructions

Dice up onion.

Peel garlic and either dice or put in garlic crusher.

Chop up tomato into small pieces. There is no need to remove the skin.

Cut chicken into thick strips about an inch thick.

Put the olive oil in a deep pan.

Fry the chicken pieces in the deep pan on a slow heat.

While the chicken is cooking, you can make the tomato sauce.

To make the tomato sauce for the chicken Neapolitan

Melt the butter in a pot.

While you are cooking the sauce, remember to turn the chicken breast pieces.

Once the butter has melted, add the garlic, onions, fresh tomatoes, tin tomatoes and half a tube of tomato puree.

Mix all those ingredients with a wooden spoon. Your heat on the cooker should be of medium heat.

Add salt, pepper, turmeric, cumin, ginger, parsley, oregano, parsley and brown sugar (white is fine instead) into the tomato sauce.

Give the herbs a good stir into the tomato sauce.

Let it simmer away while the chicken pieces are cooking.

It is a good idea to cook tomato sauce in a deep pan as it can splash and be a bit messy.

Don’t forget to keep an eye on your chicken, turning it occasionally. Ideally you don’t want it crispy.

After 10 – 15 minutes, the tomato sauce now needs to be poured into the deep pan with the chicken.

Give the chicken and sauce a stir, making sure the chicken pieces are all covered well by the sauce.

Cook the chicken and tomato sauce for a further 10 minutes.

Chicken Neapolitan – Time for Spaghetti

While the tomato sauce and chicken is cooking, this is the time to cook the spaghetti pasta.

Place the spaghetti in a pot of hot water and cook for about 12 minutes or as directed on the packet.

Drain the pasta and rinse off starch with hot water.

Then add your cooked spaghetti into the deep pan of chicken and tomato sauce.

Mix it all around; making sure your spaghetti gets covered by the tomato sauce.

Serve it on a plate and grate some parmesan cheese on your chicken Neapolitan.
