Healthy oat bar MMMmmmm they are really flavoursome and are a great slow releasing energy food.
The healthy oat bar is made with peanut butter and honey. There is no added sugar.
These healthy oat bars are perfect for a snack at home or work.
It is a healthy snack to put in the kids lunch boxes. If the kids help make them too, then they will be super proud going to school eating a healthy oat bar from their lunchbox that they helped make.

Ingredients
- 120g butter
- 60g coconut
- 30g pumpkin seed
- 200g porridge oats
- 4 tbsp honey
- (OR 3 tbsp honey and 1 tbsp syrup)
- 2 tbsp peanut butter
- 100g chocolate chips (optional)
- 60g sultanas
- 200g bar of chocolate for topping (optional)
- 20g crushed nuts
Healthy Oat Bar – Method & Instructions
Pre-heat oven to Gas 5 / 190°C / 375°F
Melt the butter in a pot then turn the heat off while adding the next few ingredients.
To the pot add your honey and syrup.
Add the peanut butter to the pot.
Now put the heat back on and have it on a low heat setting.
Give it a good stir so it will become nice and smooth.
It is now time to add the coconut which will give it that natural sweetness.
Put the sultanas in too, this also gives it a bit of natural sweetness.
Add in the pumpkin seeds.
Throw in some crushed nuts and stir well.
The porridge now needs to be added and mix it well until all the porridge oats are covered. The mixture will be a nice golden colour when all the porridge is mixed completely.
Porridge is so Healthy
It’s perfectly normal that it will be sticky and hard to mix that means it is doing its job, combining everything together to make that yummy healthy oat bar.
Once it is all mixed, turn the heat off.
You can either add the chocolate chips in while mixture is still warm and the chocolate will melt and you get this lovely chocolate in amongst the oat bar. Or you can let mixture cool and then add chocolate chips for to have the chunky chocolate bits.
Mix the chocolate chips into the mixture.
Line two loaf tins with parchment or greaseproof paper.
Divide mixture into two parts, one for each loaf tin.
Place the mixture into the loaf tin and squash it down with the back of a metal spoon. Pack it firmly.
Bake in the oven for 25 – 30 minutes.
Let it cool for at least an hour. Once it is completely firm then cut into slices. You should get 6 bars from each loaf tin.
Melt some chocolate and cover the healthy oat bar with the melted chocolate and then let the chocolate harden.
Make a nice cuppa and sit down and enjoy the healthy oat bar.
